Some years ago in the 320 sim during a 'request' period, I asked if we could attempt a landing without hydraulics. We set up failures in all three systems from about 15 miles on left base. After the exercise (somewhere in the infield) we discussed the event and the checker made the comment that it may not have been a fully valid simulation. He noted that for events outside of the 'normal' envelope it required an 'engineering' level of simulator to properly replicate what the aeroplane response would be.

Also, regarding stall testing, I remember hearing that TC was not in MD's good books after stall testing on the DC-10 apparently twisted the airframe. Third plus hand info, so not sure of the accuracy.
